I'm originally from CA, consider my hometown to be Shelbyville, KY but am currently residing in Pineville, KY. I love hanging out with my kiddos and Dan, the city, the ocean, taking hiking trips in the mountains, being around my closest friends, and watching a good chick flick! More than anything though, I love praising and worshiping our Savior Jesus Christ. It is a mystery to me, why He chooses and wants to use me?!?! He is so amazing!

Better Late Than Never

My mom came down for the weekend, and we went to East Cumberland Church to watch the fireworks in Middlesboro. It was so hot that day, but we had a great time. And great fellowship!

New Recipes!!

I love cooking for my family! And I especially love trying new recipes! Check out these two yummy recipes that I'm experimenting with!

Bistro Chicken Pasta Salad
Super Easy and Super Yummy!!
2 cups of cooked penne pasta
1 cup of quartered cherry tomatoes
some parmasan cheese
pack of Italian Dressing Mix
1/3 cup of fresh basil cut into strips
1/4 cup of chopped red onion
some sun-dried tomatoes
boneless, skinless, chicken breasts

cook pasta, cover the chicken in bbq sauce, grill the chicken until it's done, then mix all the ingredients together!

Grilled Lemon Fish with Asparagus
haven't tried this one yet, but plan on cooking it tomorrow night for Dan!
5 lemons, divided
1/2 cup of Sun-Dried Tomato Dressing
4 firm-textured fillets, such as cod, tilapia, or salmon
1 lb asparagus, trimmed

squeeze juice from one lemon with dressing. Mix. Pour half the dressing mixture over fish. Refrigerate for 15 mins. Heat grill. Cut each of the remaining lemons into 4 slices. Place 8 lemon slices on grill, place fish on top of the lemon slices. Brush more dressing mix on fish. Grill for 5 mins then turn over. Add remaining lemon slices and asparagus to grill. Brush with dressing. When the fish is cooked, discard the lemon slices that were underneath the fish.

Random!

I have an interest in sewing! Yes, sewing. I've actually had an interest in it for a while now, but I've never really had anyone available to teach me, but, I am determined to learn! :) For any crafty people out there who read my blog, are there any suggestions on any certain type of sewing machines?? I'm looking into a Brother CS6000i. Is this a good machine? I'm wanting to start out with making some basics, maybe some curtains for the cottage, an apron, and some other just basic stuff.

Help please! Please post any suggestions! Thanks a bunch!!

I LOVE What He is Teaching Me!!

Even though at times it's painful and hard to take in, I am absolutely LOVING what God is teaching me at this place! I am surrounded by godly women who love the Lord, and are ever so willing to share and pass down their godly wisdom to young, prideful, stubborn women like myself! :)

Some things that God has spoken to me about:

I can't biblically submit to my husband, if I have never fully submitted to Christ! WHOA! Let that settle with ya!

Sure I've place my faith, my hope, and my trust in Him. I am confident that I am His child. When I came to know Him 9 years ago, I was 16 years old. And although I had a wonderful pastor who had a desire for youth and through him, Christ taught me all of my foundation, I didn't learn, or maybe it was more like I didn't care, about what a biblical wife is supposed to be like. I was 16! Of course that's not on my mind. So to take all that I've ever known, seen, heard and believed about how I am to be a wife, has become this wordly lie that has become truth to me. It is so hard for me to swallow my pride, and fully surrender. But if I want to be in the will of God, I must.

Sometimes I wish that God was just this genie, who at a moment's request could just "POOF" make it all go away or get better! But of course God isn't some magical genie. He doesn't always just go "POOF" because He wants us to learn how to seek Him, trust in Him, and have faith in Him, which leads to having full confidence in Him!

I can feel Him working in my life right now, and I love it! It is so refreshing!

Potty & Loose Tooth!

Big, exciting things are happening in the Poe Family!

Nicholas is completely potty trained!! YAY! No more pull-ups! It has taken much bribery, but Nicholas has finally mastered the potty! We still do much cheering and celebrating after each victory - Nicholas even cheers for all of us now! Including in public places! :/ One night we were at Pizza Hut, and after Nicholas used the potty, he ran out into the lobby and yelled for all to hear with much excitement and joy, "I WENT POTTY!!!" And as I said, he even cheers for us at home! High fives, hugs, dancing and all!

Zachary has his first loose tooth! And he's looking forward to the day it comes out! Each day he asks us if it's any looser, then proceeds to explain to us that he thinks it is and why it is!

Good Stuff!! I love my kiddos!

Picture Updates!!!

YAY! We finally got the laptop working again so I'm able to finally get some pictures on here! Here's some for now. They're not in any certain order. Enjoy!
Earlier in the Spring we took the boys on a picnic / fishing trip. We were planning on staying the night, but I chickened out - I am NOT a country girl by no means, so the no lights, no water really just did not go well with me! We hung out with our pizza, let the boys fish a while, then roasted marshmellows and made some smores! We left at around 10:30 that night. The bugs were HORRIBLE! - Another reason why I chickened out - I don't do bugs very well either!

Nicholas wouldn't eat the smore put together, nor would he eat a roasted marshmellow. Only the chocolate and graham cracker together, and then the marshmellow on a stick!!


We've also spent some time walking around campus and taking the kids to the big open field and the playground on campus. It's been fun!!





We went to the Pinnacle, and saw some more amazing views! I love the Pinnacle!





Campus was absolutely beautiful during Spring!

In March, Dad and Marquita visited us for the weekend. We took the boys to a park in Pine Mountain and just enjoyed each other's company!
